Raw Chocolate Bites
This is a recipe I whip up regularly and you can always find a stock of these little treats in our freezer. They are perfect for a quick chocolate fix of melt-in-your-mouth richness.
Ingredients and Directions:
In a small pot, slowly melt together:
- 1/2 cup coconut oil
- 1/2 cup cocoa
- 1/4 cup maple syrup (or other liquid sweetener such as honey)
- Pecans (optional)
Pour into mini muffin cups (I love silicone) and cool until they harden. This can be done in the fridge or freezer. Store in air tight container in freezer.
Tip: You can add 1/2 tsp of mint extract for a mint chocolate flavor, or you can spread the mixture onto a wax paper lined cookie sheet, top with chopped nuts and dried fruit and make it into a bark.
