Peanut butter noodles

Peanut butter noodles are a treat! This meal comes together quickly and is a hit with all ages. You can customize the veggies to whatever you have on hand. If your kids are school age, they probably cannot take leftovers to school, so have seconds =)

Ingredients:

  • rice noodles, 1/3 of the package
  • 3/4 cup peanut butter
  • 3 tbs soy sauce
  • 2 tbs apple cider vinegar (could use red wine vinegar or even try balsamic)
  • 2 tbs sesame oil, one for sauce, one for sauteing veggies
  • 2 tbs honey
  • 1/2 or more of warm water
  • 1.5 tbs freshly grated ginger (I keep a ginger bulb in the freezer so it’s ready to go). Try ginger powder if needed
  • 2 cloves of garlic, pressed
  • 1 tsp of red pepper flakes or a squirt of hot sauce
  • Chopped veggies of choice. I used orange pepper, mushroom, and frozen corn & peas

Directions:

  • Prepare rice noodles according to package
  • Dice and saute your veggies in 1 tbs sesame oil using a wok or large frying pan
  • In a food processor, blend together peanut butter, soy sauce, vinegar, seasame oil, honey, water, ginger, garlic and hot sauce
  • Add peanut butter sauce and cooked noodles to the wok, toss and serve.
