Chocolate Mint Mini Cups
This is a chocolate treat regularly found in my freezer. These bite size cups are perfect for a quick chocolate fix of melt-in-your-mouth richness. I suggest you have one then wait 5 minutes or they could be gone in a hurry and you’ll end up with a sore tummy.
For a more fancy look, you can definitely make this as a bark with your choice of goodies sprinkled on top (slivered almonds, cranberries, course sea salt, candied ginger etc.), just be sure to keep it chilled so they don’t melt in your pan.
Ingredients and Directions
On the stove melt and whisk together:
- 1/2 coconut oil
- 1/2 cocoa powder
- 1/4 cup maple syrup (or other liquid sweetener such as honey)
- 1/4 tsp mint extract
Pour the mixture into mini muffin cups (I love silicone) and cool in the freezer until hardened. Pop them out of the mini liner and enjoy. As you can see in my picture, I added a toasted pecan to each of mine 🙂
