Chocolate Chia Seed Pudding
This is so good! I ate a lot at once and it kept me wanting more. I originally made it as breakfast, but after sampling it (immediately after combining ingredients, and long before it was set), I knew this was a dessert – heavy on the syrup :). This is dairy free and grain free but full flavor.
- 1 cup almond milk
- ¼ cup chia seeds
- ¼ cup cocoa
- 1-3 tbs maple syrup (honey or agave nectar would work well)
- Combine all ingredients in a mason jar (or anything with a tight fitting lid) and leave in the fridge for 3 hours or overnight.
I was excited to eat this right away, but you could top it with anything you’d like – fruit, granola, nuts etc.
Note: There are lots of options! If you don’t want chocolate, skip the cocoa and add ½ tsp of vanilla. Shredded coconut and/or peanut butter would be tasty additions as well!
