Almond flour & Coconut Chewy Chocolate Chip Cookies

These are so good. I am eating one right now. Wait, it’s only 10 am? Actually, I’ve been thinking about these cookies for an hour and I’m impressed I waited this long. You will love them too!

In keeping with my current theme, these cookies are dairy and grain free! Normally I research recipes and use a combination of ideas to create my own. In this case, I used the exact recipe from http://minimalistbaker.com/almond-meal-cookies-with-chocolate-chips-and-coconut/ and the only thing I changed was to increase the chocolate chips. Next time I’ll double the recipe 🙂

Ingredients:

  • 1 ¼ cup almond flour
  • ½ cup shredded unsweetened coconut
  • 1/3 cup brown sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ edges begin to brown cup (or more) chocolate chips
  • 1 egg
  • 3 tbs coconut oil, melted
  • ½ tsp vanilla
  • Instructions:
    • In a large bowl, stir together almond flour, coconut, sugar, baking powder, salt and chocolate chips
    • In a separate bowl, whisk egg until doubled in size then whisk in coconut oil and vanilla
    • Add wet to dry and mix it up
    • Chill in the fridge to allow the oil to harden. This will allow it to easily form into balls
    • Preheat oven to 350
    • Shape into one and a half inch balls, place on a baking sheet and flatten a little
    • Bake for 9 minutes or until
