    Scalloped Sweet Potatoes

    SCALLOPED SWEET POTATOES – dairy and grain free Holiday dinners in our house usually include scalloped potatoes which we all love!! This Easter was a little different since we were testing out dairy free, grain free dishes…..and NO potatoes!! So, of course we used sweet potatoes. It turned out great! Oil for greasing the pan 4 large sweet potatoes, sliced thin 1 onion, finely chopped ¼ cup butter (could use margarine or coconut oil I think) – see later post of Why Butter is Okay 2 tbs banana flour 2 ½ cups chicken broth (plus more liquid if needed) Salt, pepper and paprika, to taste Directions: Grease your casserole dish, then layer potatoes, onion and salt & pepper In medium saucepan melt butter then stir in banana flour until well blended.     Last night we had coconut curry soup with shrimp and it was my favorite of all the soups I’ve made. I often have a craving for a soup just like this and end up buying it (from Cambodiana Restaurant DT Kingston) because I had no idea it would be such a cinch to make.  My mind is racing with variations of curry soup – there will be more to come! As for this recipe, two things led to this soup. First, I asked my husband if he had a request for dinner and he said shrimp. I love shrimp but didn’t want to spend a lot of time on all the sides we’d need to fill up. Secondly, it was a dreary grey day so soup seemed like the answer.     Corn, Potato & Bacon Chowder

    I am pretty excited about this soup. Really, you should try it! It’s my first soup of this fall season and an easy crowd pleaser. This is a soup that comes together quickly so, like me, you can make it with a baby wrapped to your body. Although this soup would stay good for a few days, it did not last that long around here. Ingredients: 1.5 cups corn – roasted 8 slices of bacon (I use pre-cooked from costco which speeds things ups) 3 tbs flour (used whole wheat) 1 red pepper – diced 1 onion, diced 2 cans chicken broth 1-2 large potatoes (2nd time I used a bunch of mini potatoes cut in half) mushroom (optional).
