    No Hassle Stuffed Chicken

    This easy-peasy recipe can be prepared in 5 minutes, baked in 30 and be ready to serve. You could pair this stuffed chicken with just about anything from rice to potatoes or roasted veggies. You’ll need: 4 chicken breast – slice lengthwise almost all the way through 8 tbs Pesto 1/3 block of cream cheese BBQ seasoning or seasoning of your choice Preheat your oven to 350 Carefully slice your chicken and “unfold” the breast. Place a generous slice of cream cheese on the chicken (or any cheese). Spoon in a heaping tbs of pesto (I like the Costco brand for it’s natural ingredients).     Sometimes, well most times, families are looking for healthy meals that can be made quickly with ingredients they have on hand. Black bean burgers are a great candidate since they will still work if you are missing a spice or want to add one in. You can serve this on a whole wheat bun with hummus and roasted red pepper or dress it with your favorite toppings like cheese, mustard and pickles.
