    In 45 minutes you can have a whole meal diced, sliced, seasoned and served for dinner! It’s staying light a little later these days which means there is time for outdoor play after daycare =) After playing outside until 5:45 pm, I had to prepare dinner in a hurry to meet my sons 7:30 pm bed time. I had already thawed chicken breasts, so I took a look in the fridge and came up with a quick plan – Brushetta Chicken.     When you need to get a tasty, hearty meal on the table in a hurry, try this easy Chicken Parmesan. It comes together quickly and you can toss up a salad or boil some noodles while it bakes so your whole meal is ready in 35 minutes. 4 chicken breasts, sliced in half lengthwise (butterflied) Jar of your favorite marinara sauce 2 cups grated mozzarella cheese (or any cheese, either grated or sliced) 1/2 cup grated Parmesan (optional – despite the name) 1/2 cup seasoned bread crumbs Drizzle of olive oil Preheat your oven to 350 Directions: drizzle your oven dish with olive oil and spread it around the bottom to avoid sticking.     This is a chocolate treat regularly found in my freezer. These bite size cups are perfect for a quick chocolate fix of melt-in-your-mouth richness. I suggest you have one then wait 5 minutes or they could be gone in a hurry and you’ll end up with a sore tummy. For a more fancy look, you can definitely make this as a bark with your choice of goodies sprinkled on top (slivered almonds, cranberries, course sea salt, candied ginger etc.), just be sure to keep it chilled so they don’t melt in your pan.
