    HELLO BANANA FLOUR!! These pancakes turned out terrific! Although pancakes taste good with a banana flavour, this flour actually doesn’t taste like bananas. It is made from green, unripe bananas so the banana flavor is not there. In fact, many claim it has an earthy flavor. I say it has a perfect all purpose flour flavor – the same I’ve loved for years in many many recipes. Before I get ahead of myself, I should admit that I have only tried it in this one pancake so far, but, I cannot wait to try out my new found banana flour in all sorts of recipes! Ingredients: ½ cup banana flour 3 eggs ½ cup almond milk 2 tsp vanilla 1 tbs honey 1½ tsp baking powder ½ tbs cider vinegar pinch of salt Directions: Place all ingredients in a blender and blend until smooth.     Honey Mustard Chicken, sweet and crunchy Salad

    Yesterday I thawed chicken breast and when dinner time arrived, I took a quick  look in the fridge and make this chicken salad with minimal prep time. You could add any toppings you’d like, or use this chicken as your main with roasted veggies on the side. This chicken is satisfying and could be used in many ways. Mustard chicken glaze 4 chicken breast, butterflied (I like to butterfly my chicken breast a lot. It provides more surface area for the marinade and allows for quicker cooking) 1/3 cup grainy mustard 1/3 honey ½ tsp paprika 1 tsp parsley flakes Salt & pepper, oil Instructions Preheat oven to 350 Spread olive oil on baking dish Mix all ingredients together and spread over chicken Bake for 30-35 mins Salad toppings Bed of baby spinach Sweet potato, cooked (this…

    Spaghetti Squash

    This is an easy weeknight meal and it’s all veg – Gluten free and dairy free. You can use whatever you have on hand to spruce it up, but all you really need is tomato sauce – that’s how my 2.5 year old love it! Ingredients: 1 spaghetti squash 1 jar of favorite marinara sauce Favorite veggies, sliced and sauteed Meatballs, optional Salt & Pepper Directions: Cut squash lengthwise and remove seeds. Place flesh side down in ½ inch of water in roasting pan and bake at 350 for 45 minutes or until you can easily poke a fork through it. Your “spaghetti” is ready to go! Scrape it into a big bowl and top it however you choose. In this case, we made it a meal with meatballs, sautéed mushroom and peppers and our favorite marinara. Scrape squash out with the fork…
