    These are so good. I am eating one right now. Wait, it’s only 10 am? Actually, I’ve been thinking about these cookies for an hour and I’m impressed I waited this long. You will love them too! In keeping with my current theme, these cookies are dairy and grain free! Normally I research recipes and use a combination of ideas to create my own. In this case, I used the exact recipe from http://minimalistbaker.com/almond-meal-cookies-with-chocolate-chips-and-coconut/ and the only thing I changed was to increase the chocolate chips.     Chocolate Chia Seed Pudding

    This is so good! I ate a lot at once and it kept me wanting more. I originally made it as breakfast, but after sampling it (immediately after combining ingredients, and long before it was set), I knew this was a dessert – heavy on the syrup :). This is dairy free and grain free but full flavor. Ingredients: 1 cup almond milk ¼ cup chia seeds ¼ cup cocoa 1-3 tbs maple syrup (honey or agave nectar would work well) Directions: Combine all ingredients in a mason jar (or anything with a tight fitting lid) and leave in the fridge for 3 hours or overnight.     Spaghetti Squash

    This is an easy weeknight meal and it’s all veg – Gluten free and dairy free. You can use whatever you have on hand to spruce it up, but all you really need is tomato sauce – that’s how my 2.5 year old love it! Ingredients: 1 spaghetti squash 1 jar of favorite marinara sauce Favorite veggies, sliced and sauteed Meatballs, optional Salt & Pepper Directions: Cut squash lengthwise and remove seeds. Place flesh side down in ½ inch of water in roasting pan and bake at 350 for 45 minutes or until you can easily poke a fork through it. Your “spaghetti” is ready to go!
