    Scalloped Sweet Potatoes

    SCALLOPED SWEET POTATOES – dairy and grain free Holiday dinners in our house usually include scalloped potatoes which we all love!! This Easter was a little different since we were testing out dairy free, grain free dishes…..and NO potatoes!! So, of course we used sweet potatoes. It turned out great! Oil for greasing the pan 4 large sweet potatoes, sliced thin 1 onion, finely chopped ¼ cup butter (could use margarine or coconut oil I think) – see later post of Why Butter is Okay 2 tbs banana flour 2 ½ cups chicken broth (plus more liquid if needed) Salt, pepper and paprika, to taste Directions: Grease your casserole dish, then layer potatoes, onion and salt & pepper In medium saucepan melt butter then stir in banana flour until well blended.     HELLO BANANA FLOUR!! These pancakes turned out terrific! Although pancakes taste good with a banana flavour, this flour actually doesn’t taste like bananas. It is made from green, unripe bananas so the banana flavor is not there. In fact, many claim it has an earthy flavor. I say it has a perfect all purpose flour flavor – the same I’ve loved for years in many many recipes. Before I get ahead of myself, I should admit that I have only tried it in this one pancake so far, but, I cannot wait to try out my new found banana flour in all sorts of recipes!     Yesterday I thawed chicken breast and when dinner time arrived, I took a quick  look in the fridge and make this chicken salad with minimal prep time. You could add any toppings you’d like, or use this chicken as your main with roasted veggies on the side. This chicken is satisfying and could be used in many ways. Mustard chicken glaze 4 chicken breast, butterflied (I like to butterfly my chicken breast a lot.
