  • Banana Flour Pancakes

    Banana Flour Pancakes

HELLO BANANA FLOUR!! These pancakes turned out terrific! Although pancakes taste good with a banana flavour, this flour actually doesn’t taste like bananas. It is made from green, unripe bananas so the banana flavor is not there. In fact, many claim it has an earthy flavor. I say it has a perfect all purpose flour flavor – the same I’ve loved for years in many many recipes. Before I get ahead of myself, I should admit that I have only tried it in this one pancake so far, but, I cannot wait to try out my new found banana flour in all sorts of recipes! Ingredients: ½ cup banana flour 3 eggs ½ cup almond milk 2 tsp vanilla 1 tbs honey 1½ tsp baking powder ½ tbs cider vinegar pinch of salt Directions: Place all ingredients in a blender and blend until smooth. Let…

Almond flour & Coconut Chewy Chocolate Chip Cookies

These are so good. I am eating one right now. Wait, it’s only 10 am? Actually, I’ve been thinking about these cookies for an hour and I’m impressed I waited this long. You will love them too! In keeping with my current theme, these cookies are dairy and grain free! Normally I research recipes and use a combination of ideas to create my own. In this case, I used the exact recipe from http://minimalistbaker.com/almond-meal-cookies-with-chocolate-chips-and-coconut/ and the only thing I changed was to increase the chocolate chips. Next time I’ll double the recipe 🙂 Ingredients: 1 ¼ cup almond flour ½ cup shredded unsweetened coconut 1/3 cup brown sugar ½ tsp baking powder ¼ tsp salt ½ edges begin to brown cup (or more) chocolate chips 1 egg 3 tbs coconut oil, melted ½ tsp…

  • Chocolate Quinoa Cake

    Chocolate Quinoa Cake

This chocolate cake uses quinoa instead of a flour base so besides being decadent and delicious, it can also be served to your gluten free friends. In this version I made it dairy free as well. This batter also work well as cupcakes and as always, I highly recommend silicon muffin liners since they are very easy to use, clean and no greasing is required – ever! This recipe can come together quickly (if you already have cooked quinoa on hand). Sometimes I feel the need for warm chocolate and this definitely hit the spot. This recipe will make two 8″ cakes or about 16 muffins Ingredients: 2 cup cooked quinoa (cooked with water, not broth) 1/2 cup coconut milk (milk or coffee would work too) 4 eggs 3/4 cup veg oil 2 tsp vanilla 1 3/4 cup sugar 1 1/4 cup cocoa 1 tsp baking…
